quick tip:

What I always try to do when I’m eating is to be mindful. If you eat mindfully then a couple of things will happen:
1. you won’t over eat
2. you will be more satisfied.(When you look at your food and pay attention while you’re eating, it’s been studied that it’s then relayed to the mind that your body is being satisfied. Hence why eating while watching TV is horrible, your mind is like…”did I eat something? I don’t know, but that episode of Family Guy was great!”
3. you’re more likely to choose healthier foods
4. you will become more in-tune with your body, know more accurately if you’re really hungry or if your just stressed, or have anxiety and are just eating to satisfy those feelings.

i really have no point for this post or for this recipe….i just had a lot of smoked salmon i needed to use in my fridge! So I ended up making these adorable breakfast LOX bites!

however, these bites are a really great thing to serve, (not to mention beyond easy) if you’re having some people over to your place for brunch!  Go ahead, invite a couple people over this weekend to have a little Sunday afternoon fun at your place with some good drinks, food, and music! I’d serve these with…….well, Bellinis & Mimosas of course!!…. a nice Yogurt Parfait, and some mini Corn Muffin bites with a side of Maple Syrup to dip them in served in tiny ramekins – because i think you should always include Maple Syrup to every brunch!

i like 4th of july because……..

casserole…not just for winter. try my light summer version!

Even though it was around 85 yesterday and stinkn’ muggy out, I really wanted a “comfort” dish for dinner…..well, what better than a casserole!  So I used Quinoa as my base for this casserole – It really adds lightness to dishes. I tossed together a simple Arugula Salad that just had olive oil and fig balsamic vinegar in it-so amazingly good! Then I paired it with some nice cold Pinot Grigio with Lemon Verbena leaves in it that I plucked from my garden. Fantastic comfort dinner for summer!

Even though I didn’t aim to do so…..this is a really good “figure friendly” dish to make. There’s none of the ingredients that you normally would find in a casserole like canned cream-of-mushroom or chicken, mayo, sour cream, etc…So incorporate this dish in with your weekly meals and suffer no guilt!
