casserole…not just for winter. try my light summer version!

Even though it was around 85 yesterday and stinkn’ muggy out, I really wanted a “comfort” dish for dinner…..well, what better than a casserole!  So I used Quinoa as my base for this casserole – It really adds lightness to dishes. I tossed together a simple Arugula Salad that just had olive oil and fig balsamic vinegar in it-so amazingly good! Then I paired it with some nice cold Pinot Grigio with Lemon Verbena leaves in it that I plucked from my garden. Fantastic comfort dinner for summer!

Even though I didn’t aim to do so…..this is a really good “figure friendly” dish to make. There’s none of the ingredients that you normally would find in a casserole like canned cream-of-mushroom or chicken, mayo, sour cream, etc…So incorporate this dish in with your weekly meals and suffer no guilt!

 Apparently, “I’m outta the loop!”

According to the barely 21 year old cashier at Wholefoods, “I’m outta the loop!”.  When I asked why the bottle of juice he just rung up cost $10.99!!  he just replied, “Seriously! You don’t know about the Blue Print Cleanse?” I replied back, “Welp, I guess not Mr. Smartie Pants or I wouldn’t be freakn’ out over the price you just rung up!”

The juices are all the rage now and it’s called the Blue Print Cleanse. I researched it a bit, all the juices sound wonderful, my favorite sounding one:  White Cashew, Water, Vanilla, Cinnamon, Agave Juice….Ummmm Yumm! But I haven’t tried them yet. And I wasn’t about to let a young cashier coax me into purchasing a $10.99 bottle of juice either!

Have any of you tried this? Does it work? Is it worth my $$$ or should I spend my money on a pair of Michael Kors Otley cap-toe leather ballet flats!? He said people go store to store trying to find them because they sell out everyday; totally reminding me of the Furbie fury back in the day, a cult like following, haha.
