Beat 2 Eggs
Take a sheet of Matzah and break into bite-sized pieces. Soak in warm water and then squeeze to drain.
Mix Matzah in with the eggs. Add a pinch of salt + pepper, and then a couple pinches of Cinnamon and sugar.
Put in a medium sized skillet with melted butter and cook on one side till lightly brown (1 min.), then flip and cook for 1 more minute. Cut into fours, sprinkle with cinnamon and pour nice hot Maple Syrup on top. *Serves 2*
